Location: Miraku Boston, in Coolidge Corner Brookline

Job Summary: We are seeking a skilled and passionate Cook to join our dynamic kitchen team at Miraku Boston.  As a Cook, you will play a crucial role in maintaining the high standards of our culinary offerings, focusing on traditional and innovative ramen dishes. You will assist the kitchen staff in daily kitchen operations, ensure food quality, and mentor junior kitchen staff.

Key Responsibilities:

  1. Assist in Kitchen Operations:

    • Support and manage daily kitchen activities, including food preparation, cooking, and plating.

    • Oversee kitchen staff to ensure efficient workflow and adherence to recipes and presentation standards.

  2. Food Quality and Consistency:

    • Ensure all dishes are prepared to the highest quality and consistency.

    • Maintain a keen eye for detail in food presentation and portion control.

  3. Inventory and Supplies Management:

    • Monitor inventory levels and assist in ordering and stocking kitchen supplies.

    • Ensure proper storage and rotation of ingredients to minimize waste.

  4. Menu Development:

    • Collaborate with Miraku management staff in creating and refining menu items, focusing on ramen and related dishes.

    • Stay updated with culinary trends and incorporate new techniques and ingredients as appropriate.

  5. Health and Safety Compliance:

    • Ensure kitchen operations comply with health and safety regulations.

    • Maintain cleanliness and organization in all kitchen areas.

  6. Training and Development:

    • Mentor and train junior kitchen staff, fostering a positive and productive work environment.

    • Provide guidance on cooking techniques, food safety, and efficient kitchen practices.

Qualifications:

  • Passion for culinary excellence and continuous learning, preferably in a ramen or Japanese cuisine-focused restaurant.

  • Some degree of professional culinary experience.

  • Knowledge of ramen preparation, including broth, noodles, toppings, and presentation.

  • Excellent leadership and communication skills.

  • Ability to work in a fast-paced, high-pressure environment.

  • Strong organizational and multitasking abilities.

Working Conditions: The job may involve working long hours, standing for extended periods, and working in a hot and fast-paced kitchen environment.

Ramen Server

Job Summary: The Ramen Server plays a crucial role in providing exceptional customer service and ensuring a smooth dining experience in a bustling ramen shop environment. They are responsible for taking orders, serving ramen bowls and beverages, and maintaining a welcoming atmosphere for guests.

Responsibilities:

  • Welcome and seat guests promptly, providing menus and answering any initial questions about the menu or specials.

  • Take accurate food and drink orders, including customizations or dietary preferences, and enter them into the POS system efficiently.

  • Coordinate with kitchen staff to ensure timely preparation and delivery of ramen bowls, appetizers, and beverages.

  • Serve ramen bowls with attention to detail, ensuring correct presentation and garnishes according to shop standards.

  • Check in with guests during their meal to ensure satisfaction, refill drinks, and address any additional needs or requests.

  • Process payments accurately, handle cash and card transactions, and maintain a tidy cashier area.

  • Collaborate with kitchen and serving team members to maintain a smooth flow of service and uphold quality standards.

  • Maintain cleanliness and organization in the dining area, including clearing tables and resetting them for new guests.

Requirements:

  • Previous experience as a server in a restaurant, preferably with exposure to Japanese cuisine or ramen concepts.

  • Strong customer service skills, with a friendly and attentive demeanor.

  • Knowledge of basic food and beverage service principles, including handling orders, suggestive selling, and maintaining cleanliness.

  • Ability to work efficiently in a fast-paced environment, prioritize tasks, and multitask effectively.

  • Flexibility to work evenings, weekends, and holidays, as ramen shops often experience peak hours during these times.

  • Interest in learning about ramen ingredients, preparation methods, and cultural significance to enhance guest experience.

Working Conditions: The job may involve standing for extended periods, lifting trays of food and beverages, and working in a lively and energetic ramen shop atmosphere.

Prep Cook/Kitchen Assistant

  • Keeping the kitchen clean and orderly

  • Ensuring all ingredients are in stock for the Chef to complete their menu

  • Washing cutlery and dishes

  • Parboiling foods, allowing the Chef to prepare the menu more efficiently

  • Seasoning and preparing the necessary ingredients for cooking

  • Preparing some dishes such as salads or other less complex menu items

  • Setting out all the Chef’s ingredients before each shift and refill as necessary

A successful Prep Cook candidate typically has some of the following skills and qualifications:

  • Ability to work under pressure

  • Excellent verbal communication skills

  • Strong organizational skills

  • In-depth knowledge of kitchen health and safety requirements

  • In-depth knowledge of safe food storage guidelines

  • Ability to use kitchen utensils safely

  • Ability to take direction and work as a team player

  • Knowledge of some specific cooking processes such as reducing sauces, parboiling food, boiling water, or preheating pans and ovens

Prep Cook experience requirements:

A Prep Cook is an entry-level position and candidates often don’t have any prior experience, so they learn on the job.
