About Miraku

Our mission is to showcase the unique and delicious flavors of Hokkaido’s Rishiri Island in a flavorful bowl of ramen. We spread happiness, one bowl at a time.

Our Ramen

Our ramen uses Rishiri Konbu as one of its signature ingredients. It is known for its deep and aromatic flavor and is one of the highest grades of Konbu. By using the highest quality ingredients, we strive to create dining experiences that both delight and nourish our guests.

Konbu is dried for three years to amplify the flavor and transform it into a supreme soup stock.

The konbu is slowly simmered for 8 hours to extract the flavor and nutrients into the broth. It is then added with the main broth to create the soup base.

An exclusive specialty soy sauce is carefully caramelized to give the broth its signature savory flavor.

High-quality noodles are added with mushroom, bamboo shoots, nori, green onion, and chashuu (pork) to complete the dish.

Story of Miraku

Miraku was born in 2007 on Rishiri Island. Our restaurant has since expanded, opening a second location in the Shin-Yokohama Ramen Museum and additionally creating both permanent and limited-release ramen products that are available throughout Japan. In 2012, we were awarded the Bib Gourmand in the Michelin Guide Hokkaido; a prestigious recognition given to restaurants that offer exceptional food at moderate prices. We have also been active participants in numerous food events across Japan and had memorable pop-ups in Boston in 2022 and Hawaii the following year.

The Birth of Our Ramen

Konbu (kelp) is one of the local delicacies of Rishiri, a small island situated at the northernmost tip of Hokkaido and is considered one of Japan's finest ingredients. We've set out to explore the further potential of Rishiri Konbu, and our journey led us to create ramen from it.

As the first step in bringing this flavor from Japan to the rest of the world, we've chosen to expand into Boston, crossing the seas to introduce this taste to a global audience.

Taste of Rishiri

Rishiri Konbu, a type of sea kelp only found around Rishiri Island, is highly valued in Japanese cuisine due to its flavorful taste. It grows in the cold, nutrient-rich waters around the island, where snow melted from the surrounding mountain flows into the sea, providing essential minerals for the plant growth. The konbu is harvested by hand during the summer, and is then sun-dried to maintain its robust flavor. Drying the konbu has become a tradition for all the islanders, from children to seniors. Miraku brings the taste of our beloved Rishiri Island to you in an authentic bowl of ramen.
